Hearty Turkey & Vegetable Chili

Ingredients
- 1 lb lean ground turkey
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 cup diced carrots
- 1 cup diced zucchini
- 1 can (15 oz) low-sodium black beans, rinsed
- 1 can (15 oz) low-sodium kidney beans, rinsed
- 1 can (15 oz) diced tomatoes (no added sugar)
- 2 cups low-sodium chicken broth
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp smoked paprika
- Salt & pepper to taste
- Optional: fresh cilantro and a squeeze of lime for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic; sauté until fragrant (about 2 minutes).
- Add ground turkey; cook until browned.
- Stir in bell pepper, carrots, and zucchini; cook for 5 minutes.
- Add beans, tomatoes, broth, and spices; bring to a boil.
- Reduce heat and simmer for 30 minutes, stirring occasionally.
- Garnish with cilantro and lime before serving.
