WHEAT BERRY SALAD with CHICKEN & AVOCADO
This delicious, hearty, nutrient-packed meal will leave you satisfied & your blood sugar stable!
What is a Wheat Berry?
Wheat at its most basic! It is the whole grain kernel with only the inedible husk removed. Wheat berries are the source of all wheat products before any refinement occurs. For example, wheat flour comes from milled, ground wheat berries. Who knew?!
Recipe:
Prep Time: 20 minutes, 12 Servings
- 4 cups cooked wheat berries (about 1 1/2 uncooked)
- 2 stalks celery – thinly sliced
- 2 apples – chopped
- 1/2 cup sweetened dried cranberries
- 1/2 cup sliced almonds – toasted
- 1/4 cup chopped fresh parsley
- 2 cups chopped, cooked turkey or chicken
- 1 avocado, diced
For the dressing:
- 4 tablespoons olive oil
- 3 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- Salt & pepper – to taste
Instructions
- In a large bowl, combine the salad ingredients.
- In a separate bowl, whisk the dressing ingredients until smooth. Pour over the salad and mix until evenly coated.
- Adjust seasoning with salt & pepper, to taste. Serve immediately, or refrigerate for later.
